Maison Gaillard is located in the Quercy area of the South West of France, an hour drive north from Toulouse. Today, the truffle house is run by Jean-Luc Clamens, who learned his skills from Simone Gaillard whose family established the business in 1906. Every year, Clamens sources more than two tons of the best truffles - Tuber Melanosporum - from his local markets in the villages of Lalbenque and Sarlat.
